Crispy Potato and Egg Skillet


  • 4-5 medium-sized potatoes, thinly sliced into rounds
  • 4 eggs
  • 1/2 cup milk
  • 1/2 cup shredded cheese (such as mozzarella or cheddar)
  • 1/2 cup chopped green onions
  • 1/2 cup chopped bell peppers (optional)
  • Salt and pepper to taste
  • Oil for frying
  • Chopped parsley for garnish


  1. Prepare the Potatoes:Heat a little oil in a large skillet over medium heat.Fry the potato slices until they are golden and crispy on both sides, about 5-7 minutes per side.Remove the potatoes from the skillet and drain them on paper towels to remove excess oil.
  2. Prepare the Egg Mixture:In a large bowl, whisk together the eggs and milk until well combined.Add the shredded cheese, green onions, and bell peppers (if using) to the egg mixture. Season with salt and pepper and mix well.
  3. Assemble the Dish:Arrange the fried potato slices evenly in the bottom of the same skillet.Pour the egg mixture over the potatoes, ensuring they are fully covered.
  4. Cook the Dish:Cover the skillet and cook over medium-low heat until the eggs are fully set and the bottom is golden, approximately 15-20 minutes.Once the mixture is set, sprinkle a bit of additional shredded cheese on top, cover again, and cook for a few more minutes until the cheese melts.
  5. Serve:Carefully remove the dish from the skillet using a spatula.Garnish with chopped parsley.Cut into slices and serve warm.
