creme brûlée donut

Ingredients:

For the donuts:
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup buttermilk
  • 1/4 cups unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
For the vanilla filling:
  • 1 cup whole milk
  • 1/2 cup cream
  • 4 large egg yolks
  • 1/ 4 cups Granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
For the caramel icing:
  • 4 granulated sugar (for basting)
  • Directions:
  • Preheat oven to 350°F (175°C). Coat a donut pan with nonstick cooking spray.
  • Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl.
  • In a separate bowl, mix together the butter, melted butter, eggs, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and mix until well combined. Be careful not to overmix.
  • Tear off the corners and pack the dough into a piping bag or ziplock bag. Pour batter into prepared donut pans, filling each cavity about 2/3 full.
  • Bake in the preheated oven for 10 to 12 minutes or until donuts spring back when lightly touched.
  • While the donuts are baking, prepare the cream filling. Add milk and cream to a saucepan and heat over medium heat until steaming but not boiling.
  • In a separate bowl, mix together the egg yolks, sugar, and cornstarch until a smooth, light mixture forms.
  • Gradually pour the warm milk mixture into the egg yolk mixture, stirring constantly to soften the eggs.
  • Return the mixture to the pot and cook over medium heat, stirring constantly, until thickened.
  • Remove from heat and stir in vanilla extract. Place the vanilla pudding in a bowl and cover with plastic wrap. Press directly onto the surface of the vanilla pudding to avoid forming a skin. Chill in the refrigerator.
  • Once the donuts are cooked and cooled, fill each donut with the cooled custard filling using a piping bag fitted with an elongated nozzle.
  • Sprinkle granulated sugar evenly over the filled donut.
  • Using a burner, carefully caramelize the sugar in each donut until golden and crisp.
  • Serve these delicious crème brûlée donuts right away and enjoy the wonderful combination of textures and flavors.
